The unique style of this dish is to use a wooden pestle to mix all the ingredients together. Of course, the primary dish served was couscous, and the taste was outstanding. We asked the chef, who has reproduced its authentic taste for about 30 years at the Embassy of Algeria in Japan, about the recipe. At Shimomura’s restaurant, I devoured a beautifully soft chicken leg and had a lot of fun adding lemon and lime vinegar to the soup, which brought out the individual flavors clearly and sharply. I then sprinkled a 30-spice garam masala that added richer notes and echoed flavors in Indian cuisine.
The plaza contains areas such as a lawn, a small outdoor stage and a playground. As a local hub, it will hold various events where people from different generations can mingle.
